Based in historic Steyning, nestling against the inspiring landscape of the South Downs National Park, we are ideally situated to harvest the natural goodness that the rich fertile land produces. Our bees are well catered for by the flowering plants and trees that surround us. Our honey is not blended or pasteurised, making each jar unique to the hive from which it comes. For this reason, honey lovers can look forward to subtle differences in taste and colour from one jar to another, and a truly local taste experience.
Local honey should be like a good wine, with a mosaic of fantastic, hard to describe, flavours and it should be different in texture and appearance depending on where and when it was harvested. Some people judge honey quality by its floral origin, each floral variety has its own distinct and original taste, texture and colour. Flavours vary from very mild to strong and pungent and colours range from dark brown to colourless. As a general rule of thumb, light-coloured honey is milder in taste and dark-coloured honey stronger.
Our hives are only located in and around Steyning making our honey unique to this area. Most national honey brands mix everything they buy together, cook it and filter the end product leaving it without the character, nutritional value or taste of local natural honey.
